Stir-Fried Maine Lobster

INGREDIENTS:

(4 servings)

1 pound Maine lobster meat

1 tablespoon cornstarch

¼ cup water

½ cup sliced mushrooms

¼ cup chopped celery

¼ cup sliced green pepper

2 each scallion stalks

1 clove garlic

2 tablespoons low-sodium soy sauce

1 tablespoon sherry

5 tablespoons oil

½ teaspoon salt

DIRECTIONS:

Cut Maine Lobster meat into 1 inch cubes.  Blend cornstarch and cold water to a paste, add Maine Lobster cubes and toss gently to coat.  Slice mushrooms, celery, and green pepper.  Cut scallion stalks into 1 inch sections.  Mince garlic, and then combine with soy sauce and sherry.  Heat 2 tablespoons oil and add scallions.  Stir-fry a few minutes, then add remaining vegetables and stir-fry until nearly done (2 to 3 minutes).  Remove vegetables from the pan.  Heat the remaining oil.  Add salt and Maine Lobster cubes.  Stir-fry until cubes begin to curl at the edges (about 3 to 4 minutes).  Quickly stir in garlic-soy mixture, return vegetable to pan and stir-fry to re-heat and blend flavors (about 2 minutes).
