Steamed Maine Lobster with Garlic, Ginger and Black Beans

INGREDIENTS:

(4 servings, prepare in 10 minutes, cook time 10 minutes, total meal in 20 minutes)

1 large or 2 small live Maine lobsters
2 garlic cloves finely sliced
1 tablespoon ginger, shredded
2 spring onions, finely chopped
1 tablespoon salted black beans, rinsed in cold water
2 tablespoons soy sauce
1 tablespoon Shaohsing wine
1 teaspoon sesame oil

To Serve:
2 tablespoons groundnut oil
1 spring onion, finely shredded

DIRECTIONS:

Place the Maine lobster in boiling water for 1-2 minutes, to kill it.  Remove the Maine lobster from the water.  Remove its head and cut it in half, devein it and remove any roe.  Cut the Maine lobster into even serving pieces, breaking the claws with the back of your knife so that they cook evenly and are easy to eat.  Lay the Maine lobster on a large plate and place it on a trivet in a wok with boiling water.  Scatter over the garlic, ginger, spring onions, and black beans, and sprinkle over the soy sauce, wine and sesame oil.  Cover the wok and leave Maine lobster to steam for 10 minutes.  Remove the Maine lobster from the wok.  Discard the water in the wok and dry it.  Heat the oil in the wok over high heat.  When hot pour over the Maine lobster.  Scatter the spring onions over the top and serve with rice and vegetables.
