INGREDIENTS:
2 cups wild rice
2 tablespoons butter
2 tablespoons olive oil
¼ cup pine nuts
2 each
Maine lobsters (1¼ pounds), cooked and meat removed
½ cup green peas (fresh or frozen)
2 tablespoons light soy sauce
1 pinch salt & pepper, to taste
DIRECTIONS:
Cook wild rice in 3 cups of water for 30 minutes. Melt butter and oil together in a large frying pan. Sauté pine nuts and wild rice in sizzling butter mixture until nuts are golden, about 4 minutes. Add Maine Lobster meat and sauté for 3 minutes. Add peas and soy sauce. Continue cooking for another 3 minutes. Season to taste.
