Puttanesca Maine Lobster

INGREDIENTS:

(2 servings)

2 (1.5 pound) Maine lobsters
2 tablespoons olive oil
2 tablespoons garlic, chopped
2 tablespoons capers
8 each Kalamata olives
3 anchovy filets, minced
2 tablespoons white wine
2 tablespoons clam juice
2 1/2 cups marinara sauce
2 tablespoons Parmesan cheese
1 tablespoon basil
salt and pepper to taste
1 pound pasta, cooked and drained
parsley, chopped, to garnish

DIRECTIONS:

Cook and pick your Maine lobsters.  In a medium saute pan, heat the olive oil and saute garlic until it begins to brown.  Add the capers, olives, and anchovy and saute for about a minute.  Add the wine, clam juice, marinara sauce, and the basil and bring to a simmer.  Add Maine lobster meat and cheese and simmer until the Maine lobster meat is hot.  Add salt and pepper to taste.  Serve at once over pasta.  Garnish with fresh parsley.
