INGREDIENTS:

2 cups Maine Lobster meat, finely diced
2 Tablespoons butter
1/4 cup dry sherry
3 each egg yolks
1/2 cup light cream
1/4 teaspoon salt
1/8 teaspoon pepper
4 puff pastry shells
DIRECTIONS:
Heat Maine Lobster in butter 1-2 minutes. Add sherry and remove from heat.
Beat egg yolks and add cream. Gradually add egg mixture to Maine Lobster. Stir until thickened over medium heat.
Serve in puff pastry shells.
