INGREDIENTS:
(12 servings)
2 cups Maine Lobster meat, cooked and cut into bite sized pieces
15 ounces tomato sauce
2 tablespoons all-purpose flour
1 teaspoon oregano
½ teaspoon salt, divided
¾ pound mozzarella cheese, sliced
2 each eggs
1 cup milk
1 tablespoon corn oil
1 cup all-purpose flour
½ cup Parmesan cheese, freshly grated
DIRECTIONS:
Preheat oven to 450° degrees. In a saucepan combine Maine Lobster and tomato sauce. Add 2 tablespoons flour, oregano and ¼ teaspoon salt. Heat to boiling, reduce to medium heat and stir for 1 minute. Pour into 9”x13” baking pan and cover with mozzarella slices.
To make crust, beat eggs with milk, oil, remaining ¼ teaspoon salt, and 1 cup flour. When well blended pour over cheese and Maine Lobster. Sprinkle with Parmesan cheese. Bake until pizza is puffy and cheese has melted, about 25 - 30 minutes.
