Papaya and Maine Lobster Chantilly

INGREDIENTS:

(4 servings)

2½ cups cooked Maine lobster meat, chopped
1/4 cup mayonnaise
1 Tablespoon pimientos, minced
1 Tablespoon fresh parsley, minced
1 teaspoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup heavy cream, whipped
1 ripe papaya, peeled, seeded and thinly sliced
To garnish fresh mint sprigs

DIRECTIONS:

Combine mayonnaise, pimientos, lemon juice, parsley, salt, and pepper in a small bowl.
 
Fold in whipped cream. Add Maine Lobster and papaya. Mix gently.
 
Garnish with fresh mint. Serve immediately.
