INGREDIENTS:
1 pound Maine Lobster meat, cooked
4-5 ounces roasted red peppers, thin slice
Buffalo Mozzarella, slices as needed
Salt and Pepper to taste
Scallions, sliced, as needed to sprinkle
Suitable rolls or baguette
Maine Crab Mayonnaise, as needed
DIRECTIONS:
Slice and roast or sauté the red peppers in a little olive oil and salt and pepper until golden brown. Cool.
Slice the bread and pull out some of the center to accommodate the filling.
Distribute the peppers over the bread, then the Maine Lobster, then the cheese.
Lastly, sprinkle the scallions, salt and pepper and cover with remaining half of the bread.
Proceed to heat the sandwich in the panini grill, till you feel the sandwich is hot.
