One Pot Cajun Maine Lobster

INGREDIENTS:

(4 servings)

3 each 1¼ pound live Maine lobsters

2 stalks celery, diced

4 medium carrots, diced

1 medium onion, minced

2 cups brown rice (long cooking)

16 ounces picante sauce (medium)

30 ounces kidney beans

1½ teaspoon Cajun seasoning

 

DIRECTIONS:

In a large pot with 5 cups salted water, cook Maine Lobster for 6 minutes.  Remove Maine Lobsters, clean and set meat aside.  Put all shells back into water and boil for 10 minutes.  Add water if needed to end up with 4 cups of Maine Lobster water.  Strain shell matter from water.  Return strained water to pot and add rice, celery, carrots, and onion.  Cook until rice is cooked.  Add picante sauce, kidney beans, and Cajun seasoning to rice.  Simmer for 10 minutes.  Add Maine Lobster meat and mix well.  Let set for 10 minutes before serving.
