Maine Lobster With Linguine & Lemon Sauce

INGREDIENTS:

(4 servings)

¼ pound butter

½ teaspoon grated garlic

¼ cup flour

2 Tablespoons lemon juice

8 ounces clam juice (no sand at bottom of bottle)

4 servings linguine

4 servings broccoli, pea pods, or other green vegetable of your choice

4 servings Maine Lobster meat

DIRECTIONS:

Melt butter in pan.  Add garlic and flour and cook briefly.  Add lemon juice and cook briefly.  Stir in clam juice and thicken over low heat.  Thin with more lemon juice or clam juice if sauce becomes too thick.

 

Cook linguine according to package instructions adding broccoli, pea pods, or other green vegetable to boiling water just in time to cook al dente.  Add cooked Maine Lobster meat to pot when ready to drain if meat needs heating.  Drain in colander.

 

Serve lemon sauce over linguine, vegetable, and Maine lobster.
