Maine Lobster with Ginger and Scallions

INGREDIENTS:

1½ lbs.                   whole Maine Lobster

12 pieces               scallion cut 2 inches long

12 slices                 fresh ginger

3 Tablespoons       cornstarch

1 teaspoon             sesame oil

Ingredients A

½ cup                    water

1 Tablespoon         cooking wine

½ Tablespoon        soy sauce

½ Tablespoon        oyster sauce

¼ teaspoon            salt

1 dash  pepper

 

Ingredients B

 

½ Tablespoon       water

½ Tablespoon        cornstarch

DIRECTIONS:

Rinse Maine Lobster and cut Maine Lobster into 8-10 pieces.  Coat Maine Lobster chunks with cornstarch.  Fry Maine Lobster chunks in a fryer at 350o.  Deep fry the Maine Lobster until almost cooked (about 4 to 5 minutes).  Remove.

 

Add 2 Tablespoons of oil in wok; stir fry scallion and ginger until fragrant.  Add Maine Lobster chunks and (A) until boiled.  Thicken with (B) and bring to boil.  Sprinkle with sesame oil and serve.
