Maine Lobster Tortilla Roll-ups

INGREDIENTS:

(4 servings)

1 cup Maine lobster meat, cooked and shredded

1/4 cup mayonnaise

1 Tablespoon horseradish

1/4 cup green pepper, chopped fine

1/4 cup red pepper, chopped fine

2-3 drops Tabasco sauce

8 each 12” flour tortillas

1 head dark leaf lettuce

DIRECTIONS:

Mix first six ingredients in a bowl.  Spread one side of tortilla with Maine lobster mixture.  Top with a lettuce leaf.  Roll tortilla jelly roll style and secure seam with three fancy toothpicks spaced a few inches apart. (You will be cutting the tortilla in thirds).  Place on platter.  Refrigerate and cut into thirds just before serving.

Rating Real hit last weekend, tasty, filling. The only downside is that the mix would not make 8 each, only 5 and that was stretching it. BUT LIKE I STATED, GOOD, TASTY AND A REAL HIT, but then its lobster!! Santa Dave
