Maine Lobster Stock I

INGREDIENTS:

2 quarts water in which you have cooked Maine Lobsters
5-6 Maine Lobster bodies      
2-3 ounces carrots, sliced or diced     
1/3 cup leek, white part only  
½ cup celery, sliced or diced
1 cup mushrooms, diced        
½ cup onion, diced    
2-3 bay leaves
6 parsley stems           
½ teaspoon peppercorns         
2 Garlic cloves, whole peeled (or 1 teaspoon)
1 cup white wine, dry

DIRECTIONS:

Shuck the Maine Lobsters set aside the meat for another use. Simmer all ingredients about 30 minutes. The Maine Lobster bodies could also be cooked in a little very hot olive oil for a few minutes. Add the vegetables, then the wine, and reduce it for a few seconds, then build the stock. When cooked, strain, chill and store covered until you need it.
