Maine Lobster Stir Fry Over Soba Noodles

INGREDIENTS:

(4 servings)

4 each 1¼ pound Maine Lobsters

1 ounce low-fat salad oil

2 Tablespoons garlic

2 Tablespoons ginger

6 ounces carrots

6 ounces snow peas

6 ounces scallions

6 ounces Sake

3 ounces Tamari

1 ounce sesame oil

2 teaspoons arrowroot

1 teaspoon cold Maine Lobster stock

½ pound soba noodles

For garnish black sesame

DIRECTIONS:

Steam Maine Lobsters, pick tail, knuckle and claw meat.  Reserve shells for garnish and meat for stir fry.

 

Heat wok or sauté pan with salad oil.  Add garlic, ginger and vegetables in order of carrots, peas, and scallions.  Deglaze with Sake, add Tamari and sesame oil.  Thicken with arrowroot/stock mixture.  Toss with warmed soba noodles and Maine lobster meat.

 

Present on plates and garnish to make Maine Lobster the focal point.
