Maine Lobster Souffle II

INGREDIENTS:

(4 servings)

2 (1.5 pound) Maine lobsters
3 tablespoons butter
3 tablespoon flour
1 cup milk
1/2 teaspoon salt
1/8 teaspoon white pepper
pinch of nutmeg
sprinkle of cayenne pepper
4 egg yolks
6 egg whites, at room temperature
5 tablespoons swiss cheese, finely grated

DIRECTIONS:

Cook and pick your Maine lobsters.  Melt butter in saucepan over medium heat and blend in flour.  Stir in the milk, salt , pepper, nutmeg, and cayenne pepper.  Cook stirring continuously, until thickened slightly.  Remove from heat and beat in the egg yolks, one at a time.  Set aside to cool.  Beat egg whites with a pinch of salt until they are stiff but not dry.  Fold in 1 cup of these into the cooled white sauce to lighten it.  Gently fold in the remaining egg whites and the Maine lobster meat.  Butter a souffle or other deep dish and coat with grated cheese.  Turn the mixture into the dish and bake at 400 degrees for 35 minutes.  Sprinkle the remaining grated cheese over the top and continue to bake for another 5 to 10 minutes until set up and browned.  Serve immediately.
