Maine Lobster Salad Roll

INGREDIENTS:

(12 servings)

3 pounds Maine Lobster meat fresh, ½" diced

½ cup fresh chives, chopped

1 Tablespoon fresh tarragon

1½ cups mayonnaise - as needed

1 pinch salt and pepper, to taste

12 each Romaine lettuce leaves

12 each sandwich rolls

DIRECTIONS:

Mix together first five ingredients and chill well.

 

Use about 4 ounces per serving and place on any type of roll (hard, croissant, Kaiser, etc.) with romaine lettuce.
