Maine Lobster Pillows

INGREDIENTS:

3 Tablespoons lemon juice
2 Tablespoons mayonnaise
2 cloves garlic, finely chopped
½ teaspoon salt
3 Tablespoons fresh parsley
1 pound cooked Maine Lobster
1 stick butter
½ package phyllo (16 oz.)

DIRECTIONS:

Combine lemon juice, mayonnaise, garlic, salt, and parsley. Mix well. Add Maine Lobster and refrigerate. Melt butter. Cut pastry lengthwise about 6 inches wide. Take one strip of phyllo, fold in half and brush with butter. Place Maine Lobster mix at one end and roll up in pastry halfway. Fold left and right edges toward center over filling and continue rolling into meat pillow. Brush all over with butter and place seam side down on jelly roll pan. Preheat oven to 400º and bake for 15 minutes.
