INGREDIENTS:
(4 servings)
1 stick butter
2 diced scallions - use top, green parts
1 Tablespoon minced garlic
1 pinch salt & pepper, to taste
¼ cup whiskey/bourbon/cognac/brandy
¼ cup white wine
½ pint heavy cream
½ cup grated cheese
2 Maine Lobsters cooked, meat picked out
4 servings noodles
DIRECTIONS:
Sauté scallions and garlic in butter, add salt & pepper.
Add whiskey and flame (light on fire with a match) until flame goes out.
Add wine. Reduce to one half (by boiling). Add cream. Simmer until thick, about 15 minutes.
Add Maine Lobster meat and heat through.
Serve over noodles, toast, or rice.
