Maine Lobster de Jonghe

'Individual servings of Maine lobster baked with a bread crumb topping. Similiar to a dish that used to be served at Red Lobster.'

INGREDIENTS:

(6 servings, prepare in 10 minutes, cook time 25 minutes, total meal in 35 minutes)

24 ounces cooked and cubed Maine lobster meat
1/2 cup bread crumbs
2 tablespoons thinly sliced green onion
1 tablespoon lemon juice
1/2 cup butter, melted
1/2 cup grated Parmesan cheese
1/4 cup butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F.
In a small bowl, mix together bread crumbs, cheese, green onions, 1/4 cup melted butter or margarine,  and lemon juice.  Set aside.
Place Maine lobster meat into 6 ramekins.  Pour 1/2 cup melted butter or margarine over Maine lobster, and top with bread crumb mixture.
Bake for 25 minutes, or until topping is browned.
