Maine Dried Blueberries (Fine Diced)...1/2 Cup
Method: Boiled Lobster (Prep Time approx. 20-25 min.)
1. Bring 4 Cups of water to a boil in medium stockpot
2. Add 2 Tbs. of sea salt
3. Bring to full boil
4. Add lobsters
5. Cover
6. Boil for approx. 8 min.
7. Turn lobsters
8. Continue boiling for approx. 7-8 min.
9. Pull lobster from boiling water and place in ice until cool
10. Crack lobster and pull all meat from shell, keeping claw meat intact
Method: Lobster Maple Infused Ricotta (Prep Time approx. 5 min.)
1. Place 15 oz. of whole milk ricotta cheese in mixing bowl
2. Combine all lobster meat, including roe, if any (Reserve claws)
3. Add Maine maple syrup and heavy cream
4. Add salt, pepper, and spices
5. Mix well, cover, and refrigerate
Method: Blueberry Crumb (Prep Time approx. 3-5 min.)
1. Melt 4 oz. of whole butter on low heat (Add reserved claw meat)
2. Place 2 cups Panko, 1/2 cup fine diced dried blueberries, zest of lemon, cornmeal, herbs,
Paprika, salt and pepper, 2 Tbs. flour, and chives into food processor. Pulse for 30-40 sec. to mix.
3. Pour all ingredients from food processor into mixing bowl
4. Strain butter into mixing bowl and reserve lobster meat
5. Mix well. (Use hands to avoid clumping)
6. Reserve for later use
Method: Butternut Squash, Summer Squash, Zucchini (Prep Time approx. 6-8 min.)
1. In medium stockpot boil water for blanching
2. Cut off ends of vegetables
3. Seed and peel butternut squash only
4. Slice squashes and zucchini on mandolin approx. 1/8 of an inch thick
5. Blanch vegetables for no more than 2 min.
6. Strain and rinse under cold water
7. Reserve
Method: Production ( Prep & Cook Time approx. 50 - 60 min.)
1. Preheat oven to 450 degrees
2. Spray 11 x 7 x 2 baking pan or glass dish with pan spray.
3. Using rubber spatula spread thin layer of ricotta mix on bottom of pan
4. Layer assorted vegetables to cover
5. After creating 2 layers of vegetables, spread ricotta mix to cover
6. Continue process, creating several layers (in lasagna like fashion) utilizing all ingredients
7. Top with blueberry crumb mixture
8. Firmly press crumb mixture so that all ingredients form to dish
9. Cover with tinfoil and bake for 30 min.
10. Uncover and continue baking for 15 min. or until blueberry crumb is golden brown
11. Portion and place on side in the center of the plate, garnish with reserved buttered claw meat.
