Grilled Maine Lobster And Pancetta

INGREDIENTS:

(4 servings)

4 each 3 ½ oz. Maine lobster tails
4 each slices of pancetta or strips of good bacon
4 Tablespoons Marsala or sherry, as needed

DIRECTIONS:

Preheat gas grill to high or allow charcoal fire to become very hot.
 
Cube Maine Lobster meat and thread on skewers with the pancetta wrapping the Maine Lobster cubes, strips back and forth on either side like a ribbon. Brush with Marsala or sherry.
 
Grill, turning the skewers to cook the pancetta evenly. Timing varies. Watch closely to avoid burning. Serve as soon as the pancetta is golden and crisp.
