Fettucine with Maine Lobster

INGREDIENTS:

(4 servings)

2 (1.5 pound) Maine lobsters
2 tablespoons butter
4 tablespoons flour
2 cups milk
1/4 cup Swiss cheese, grated
1/4 cup provolone cheese, grated
3 tablespoon white wine
1 clove garlic, minced
2 tablespoons fresh basil, chopped
1 pound fettuccine, cooked and drained
salt and pepper to taste

DIRECTIONS:

Cook and pick your Maine lobsters.  Melt butter in a saucepan and stir in the flour until smooth.  Add the milk and stir constantly until thickened.  Add the cheeses, wine and seasonings and continue to cook until smooth.  Mix in the Maine lobster meat.  Serve over fettuccine.
