Crepe with Maine Lobster Seafood and Lemon Goat Cheese Whipped Cream

INGREDIENTS:

(1 servings)

Crepe Batter

2 cups of flour

1 egg beaten

3 tablespoons sugar

½ cup club soda

1-½ cups milk

1 Tablespoon melted butter

 

Seafood Filling

1 Tablespoon oil

2 ounces Maine lobster meat

2 shrimp

1 ounce of crabmeat

½ ounce of roasted red peppers (sliced)

Pinch of fresh parsley

Pinch of fresh cilantro

To taste, salt and pepper


Lemon Goat Cheese Whip Cream

Juice of 1 lemon

½ cup heavy cream

1 tablespoon goat cheese

DIRECTIONS:

Combine dry ingredients then beat egg in with milk and club soda mixture.  Add the dry ingredients to wet and chill for ½ hour.  In a crepe or non-stick pan heat butter (or use a pan spray) and ladle 2 ounces of crepe batter turning pan side to side to spread out batter evenly.  Cook on both sides about 3 minutes total then set aside.  (Yields 12 crepes)

Seafood Filling  

In a sauté pan heat 1 tablespoon oil and add shrimp and red peppers.  Then add crab, Maine Lobster, fresh herbs, salt, and pepper.  Sauté until hot and shrimp is cooked (about 3 minutes).  (Yields enough for one)

 

Lemon Goat Cheese Whip Cream  

In a mixer with whisk attachment combine all and whisk until forms soft peaks.  (Yields enough for one)


Assembly:

Take seafood filling and place in crepe and fold over.  Place a spoonful of lemon goat cheese whip crème on top and garnish with 3 lemon slices.
