Creole Maine Lobster

INGREDIENTS:

1 ounce olive oil

½ slice medium red onion

½ slice medium green pepper

½ slice medium red pepper

½ slice medium tomato

½ teaspoon lobster base

½ cup water

6 ounces lobster meat -- tail and claw

½ teaspoon chopped garlic

½ ounce red hot sauce

1 teaspoon Cajun seasoning

2 Tablespoons non-fat sour cream

DIRECTIONS:

Heat oil in sauté pan to medium heat.  Add onion, peppers, tomato and sauté 5 minutes.  Add Maine Lobster base to water until dissolved.  Transfer to sauté pan.  Add Maine Lobster meat, garlic, red hot sauce, Cajun seasoning and simmer 3 more minutes.  Stir in sour cream until desired consistency.  Serve over white rice.

 

Note:  This is the single serving size recipe.  Simply increase portions by the number of people to be served.
