Chilled Maine Lobster with Hot Pepper Sauce

INGREDIENTS:

(4 servings)

4 (1.5 ounce) Maine lobsters
1 jalapeno pepper, seeded, and chopped
2 red bell peppers, chopped
2 tablespoons coarse mustard
2 tablespoons red wine vinegar
2 cloves garlic, minced
1/2 cup olive oil
12 to 14 fresh basil leaves, chopped
salt and pepper to taste

DIRECTIONS:

Bring 2 inches of water to a boil in a large pot.  Add salt and Maine lobsters.  Cover and steam for 18 minutes.  Remove and cool.  Split the Maine lobsters in half lengthwise and crack the claws and knuckles.  Remove the head sac and the vein that runs through the Maine lobster tail.  Combine remaining ingredients in a blender or food processor, including claw and knuckle meat, and blend til smooth.  Top the Maine lobster with pepper mixture and serve.
