Chilled Maine Lobster Salad with Tomato Lime Vinaigrette

INGREDIENTS:

(4 servings)

2 ( 1.5 pound) Maine lobsters
1 1/2 cups tomato, chopped and seeded
1/3 cup cucumber, chopped and seeded
1/3 cup scallions, finely chopped
2 tablespoons fresh basil, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 yellow pepper, chopped
4 cups tightly packed mixed greens, torn
Vinaigrette (recipe follows)

 

Vinaigrette:

1/2 cup tomato, peeled, seeded, and chopped

2 tablespoons fresh lime juice
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 clove garlic
1/2 teaspoon sugar

DIRECTIONS:

Cook and pick your Maine lobsters.  Mix together all ingredients but the Maine lobster.  Pour vinaigrette over salad and toss.  Just after you divide it in dishes, place your maine lobster meat ontop.

Vinaigrette

To make the vinaigrette, add all ingredients into a food processor and process until smooth.
