Cheese and Maine Lobster Tarts

INGREDIENTS:

24 each miniature pastry tarts

1 cup Maine Lobster meat, cooked and chopped

4 eggs

¾ cup cream

¼ Tablespoon salt

¼ Tablespoon pepper

1 Tablespoon onion, chopped

½ cup cheddar cheese, grated

DIRECTIONS:

Preheat oven to 375°.

 

Place pastry tarts in mini muffin pans or on a cookie sheet.  Cover bottom of each tart with Maine Lobster.  Mix eggs, cream, salt, pepper, and onion.  Pour over Maine Lobster.  Top with cheddar cheese.  Bake 15 - 20 minutes or until golden and bubbly.  Serve hot or cold.
