Catalina Maine Lobster Cocktail

INGREDIENTS:

 
1 cup chili sauce
1/2 cup ketchup
1 teaspoon garlic, minced
1 teaspoon onion powder
1 large jalapeno pepper, seeded, chopped fine
1/4 bunch cilantro, chopped
1 large Haas avocado, 1/4 inch dice
2 ounces sweet red onion, fine dice
1 fresh tomato, seeded and 1/4 inch dice
5 ounces bacon, crispy, rough chop
cold water, as needed
1 pound Maine lobster meat, large chunks
parsley, chopped, as needed
lemon zest, as needed

DIRECTIONS:

Combine the chili sauce and ketchup. Mix in minced garlic and onion powder. Stir in jalapenos, cilantro, avocados, red onions, tomato, and bacon. Thin this mixture slightly with water if needed. Fold in Maine Lobster. Serve chilled with Gremolata. Serve with crostini.
