Butter Poached Maine Lobster Tail

INGREDIENTS:

(2 servings, prepare in 30 minutes, cook time 30 minutes, total meal in 60 minutes)

2  large Maine lobster tails
2 lbs. of butter, melted
3 ounces of sugar
6 ounces water
3 ounces of vinegar
4 ounces fish stock
3 tablespoons yellow miso
1 tablespoon fresh mint, finely chopped
3 tablespoons cornstarch
2 ounces heavy cream

DIRECTIONS:

Poach your Maine lobster tails in butter for about 15 -20 minutes, make sure you keep your fire low so you are poaching and not frying.
In a separate pan add your sugar and water to make a light syrup, deglaze your pan with vinegar and add your stock.
Reduce your stock and add miso and fresh mint to the sauce.
Dissolve the cornstarch in the heavy cream and add it to your sauce.
