INGREDIENTS:
(4 servings, prepare in 15 minutes, cook time 10 -15 minutes, total meal in 30 minutes)
6 live Maine lobsters or 6 Raw tails
1 red chili pepper, finely chopped
3 tablespoons coriander, finely chopped
2 teaspoons Thai fish sauce
2 teaspoons sesame oil
1 tablespoon olive oil
2 tablespoons honey
juice of 1 lime
2 teaspoons cumin
To Serve:
Handful of coriander
6 lime wedges
DIRECTIONS:
Maine Lobster: If you have live Maine lobsters place them in the refrigerator for 1 to 2 hours. To kill them stab them through the cross in the center of their heads (this will kill them instantly), then cut through the rest of the Maine lobster to cut them in half. Remove the internal track and grey sack in the head. Remove the claw from the body and crack the claw with the back of your knife.
To Marinade: Mix all the marinade ingredients together in a bowl. Place the Maine lobsters on plates and pour over the marinade. Cover the Maine lobsters and place them in the refrigerator to marinate for 30 to 60 minutes before cooking.
To Cook: Place the Maine lobsters with their claws flesh side down on a moderate - high barbecue. Cook the Maine lobster for 5- 8 minutes on each side. Alternatively cook the Maine lobsters under a hot grill (close cover). The Maine lobster shell should be red when they are ready and the flesh should be pink and white.
To Serve: Serve Maine lobsters on each plate on a bed of coriander and a slice of lime. Accompany the Maine lobster with salad or rice.
