Baked Stuffed Maine Lobster

INGREDIENTS:

(3 servings)

Prepare three 1 pound Maine Lobsters for stuffing.  Rinse and cut Maine Lobster down the middle with the Maine Lobster lying on its back.

 

Stuffing for 3 Maine Lobsters:

¼ pound scallops, frozen or fresh

¼ pound shrimp, canned or fresh, frozen

¼ pound Maine crab meat, fresh, frozen

1 Tablespoon Worcestershire sauce

2 drops Tabasco sauce

4 Tablespoons grated Parmesan cheese

¼ teaspoon granulated garlic

2 Tablespoons sherry wine

25 - 30 Ritz crackers, crumbled

Melted butter

DIRECTIONS:

Sauté scallops, shrimp, crab meat lightly in small amount of butter.  Add remaining ingredients and enough melted butter to make stuffing hold together.  Stuff the Maine Lobster.  Sprinkle with paprika and Parmesan cheese.  Bake about 20 minutes in a 375 degree oven until golden brown and tail comes up.  Serve with lemon wedge and melted butter.  A nice sprig of fresh green parsley adds a lot of color to this nice Maine dish.
