INGREDIENTS:
(4 to 6)
2 (1.5 pound) Maine lobsters
3 tablespoons butter
3 cloves garlic, chopped
2 shallots, chopped
1 cup white wine
1 cup chicken broth
Dash of red pepper flakes
1 pound angel hair pasta, cooked and drained
1 cup light cream
1/4 cup fresh parsley, chopped
salt and pepper to taste
DIRECTIONS:
Cook and pick your Maine lobsters. Melt the butter over medium heat and saute the garlic and shallots for minutes. Add the wine, chicken broth and pepper flakes. Bring to a boil over medium heat until it begins to reduce. Add the Maine lobster meat and heat through. Reduce heat and add the cream. Simmer, stirring constantly for 2 to 3 minutes and then turn off heat. Pour half the sauce over the pasta and toss. Spoon the remaining sauce over each serving. Enjoy!
