A La Caribbean Inspiration Maine Lobster

INGREDIENTS:

(4 servings)

2 each 1 lb. live Maine Lobsters
4 eggs
1 onion, chopped
½ cup olive oil
½ cup vinegar
2 teaspoons salt -- divided
For garnish fresh parsley
1 avocado

DIRECTIONS:

Boil the Maine Lobsters in 1 teaspoon of salt. Remove the meat from the Maine Lobsters and save all the juice in a small cup. Cut the Maine Lobster meat into small pieces.
 
Boil the eggs. Cut the boiled eggs keeping the yolk separate. In a blender, blend the yolks with the Maine Lobster juice, 1 tablespoon of chopped onion, 1 teaspoon salt, parsley, and olive oil to create a dip. Place the Maine Lobster cuts on an oval tray mixed with the rest of the chopped onion and egg whites. Spread the dip from the blender all over the Maine Lobster. Decorate the tray with the sliced avocado and parsley. You may use the claws and tail as a decoration on the tray, imitating the Maine Lobster form.
